Easy peasy prawn biryani

Do not get intimidated by the title. I can guarantee you saw the word biryani and thought nope, no way! that's not for me. But trust me, this is most definitely the easiest biryani you will ever make! This recipe was originally from Sorted Food which I've tweaked slightly, but check out their website and YouTube channel for amazing simple and delicious recipes.


Ingredients:

  • 2 cups rice (feeds 4-6)
  • 1 large onion (diced)
  • 5 cloves garlic
  • 4 cm piece root ginger
  • 1 green chilli (finely sliced)
  • 3 tblsp olive oil
  • a knob of butter
  • 1 handful cashew nuts
  • 15 king prawns (de-veined, head off and shelled) (I get mine from Sainsbury's)
  • 4 tblsp sultanas
Spices:
  • 5 cardamom pods 
  • 2 star anise
  • 1 stick cinnamon
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 tsp turmeric
  • Freshly chopped coriander and red chilli to garnish
Method:
  1. Pre-heat oven to 180℃. Sauté the onions, finely sliced garlic and ginger, green chilli, cashews and sultanas in 1 tblsp olive oil for 2 mins.
  2. Add spices and prawns. Turn the heat to a medium low and cook for 3-5 mins until the prawns turn pink. (If using ready cooked prawns, 1-2 mins is fine)
  3. Cook rice in salted water for 12 mins and drain.
  4. Add a knob of butter to prawns, rest of the olive oil, half of chopped coriander and cook for a further 5 mins. Season with salt according to taste.
  5. Place a layer of rice at the bottom of the dish. Next top with some of the prawns mixture. Repeat layers and then cover with foil. 
  6. Place in the oven for 15 mins and garnish with coriander, chilli and caramelised onions. 
Caramelised onions:
  1. Finely chop 1 red onion and sauté in a pan with 1 tblsp olive oil. Season with salt and pepper and a dash of lime juice. Let the onions cook on a low heat until translucent.

Autumn update


So I guess this is going to become more of a monthly write up as I've been absent for the past few weeks. Leaves have fallen, the air has become chillier, and theres that sense of excitement everywhere as christmas time creeps closer. In basic terms, only my favourite time of year! Just sharing with you what I've been loving this past month.

Starting off with food obviously, you guys know me too well, and if you follow me on Instagram or Snapchat (username - bibayusuf) you'll know all about my newest addiction to Tazo chai tea. Before this I had never been much of a tea drinker, maybe fruit or mint tea once in a while, but this chai tea is the perfect blend of spice and the best thing about it? It's DECAF!! Only Starbucks sell the tea, which means its become a daily ritual while at uni, but I'm not complaining though. I highly recommend you try it, especially if you've got a Starbucks on your campus.

My other not so guilty addiction is acai and smoothie bowls which apparently have been the newest craze in the food world. They're just so easy to make and oh so delish! Just chuck some chopped up frozen fruit and 1 frozen banana into a blender, along with a splash of water and some yoghurt if you want it even creamier. If you're making an acai bowl, just add in a heaped teaspoon of acai berry powder, then plop into a bowl and top with more fruit and granola. Seriously, I wouldn't want to start my day any other way!




The best thing about the colder months definitely has to be autumn and winter fashion. Burnt orange, plum, deep red and fifty shades of brown. I've spiced up my wardrobe with a few staple pieces, which are all season must-haves. Denim skirts and cord skirts paired with just a plain roll-neck top. Simple. Classy. It's a no brainer really. Urban Outfitters and Topshop is literally where you can find every staple and on-trend piece of clothing, and the best Autumn/Winter inspiration.




Then comes the chilly evenings, when there's nothing better than lighting a candle (Yankee- black coconut is my fav!) and indulging in a hot bubble bath. Winter is definitely the time of year that our water bills double, and thats all because of my daily soaks in the tub. I've been loving all the LUSH christmas bath products, including the Experimenter which thankfully isn't limited edition, and turns my bathtub into an enchanted heaven. The perfect evening usually ends with me tucked up in bed, with my fluffiest Hogwarts robe and watching Gilmore Girls (again!). Anyone who hasn't watched, what is in my opinion the best show of all time, seriously needs to rethink their life. And did I mention that the rumour of a Gilmore girls reunion is actually true!! Yes, that is the best news I've heard all year.



And finally, one thing to look forward to next week, the new festive drinks are out, so that gives me an excuse to spend a ridiculous amount of my non-existent bank balance on hot drinks everyday. Sounds just about right.
