Raspberry and Mango chia breakfast

So since my last breakfast post was quite popular and got some great feedback, I decided to share another one of my quick, simple and delicious breakfasts which is as you guessed it perfect to make and take on the go. The main ingredient in here is Chia seeds which is classed as a 'superfood' because its  packed with nutrients which you can benefit from by having even a small amount. They are high in antioxidant level and in protein which will keep you fuller for longer and thats why chia seeds are perfect to add to breakfasts. This breakfast is best to make the night before since the chia seeds need some time to expand over night, so when you wake up in the morning, all you need to do is chuck it into a bowl/container and you're good to go.









Ingredients: 

  • 30-40ml coconut water (or use milk if you prefer)
  • Mango chunks 
  • A handful of raspberries 
  • 2 tblsp chia seeds
  • A few tblsp coconut yoghurt (or any flavoured yoghurt)
  • Granola (optional)

Method: 
  • In a small bowl, mix the chia seeds and coconut water. Cover with cling film and place in the fridge over night or until the chia seeds have expanded. 
  • In another small bowl, use a fork to mash up the raspberries with a squeeze of lemon/lemon juice. Cover and place this in the fridge too. 
  • So since the chia seeds have expanded overnight, they should resemble a paste like texture because they will have absorbed the coconut water. Layer the seeds, raspberries, mango and yoghurt. Repeat the layers and top with granola.
